Así nace un Yerbal:
Las semillas dos años después de germinar y crecer en almácigos se trasladan al campo, entre las plantas de Yerba Mate se planta la “Cubierta Verde”que está compuesta de plantas, enriqueciendo la tierra y manteniendo su humedad, lo que protege de las altas temperaturas y evita que crezcan malezas que compiten con las plantas de Yerba Mate, facilita la limpieza del yerbal, etc.
Gracias a la “
Cubierta Verde” evitamos el uso de herbicidas y otros agrotóxicos dañinos para la salud que contaminan el suelo, el agua y las plantas.
Ahora sí la plantación esta completa, pero aún faltan años para poder cosechar.
La Cosecha o “Tarefa”:
Cuatro años después de plantado el yerbal se inicia la primer poda y la Cosecha o “Tarefa”. En adelante la cosecha se realizará cada dos años para que las hojas estén maduras y no se debiliten las plantas.
ANNA PARK es una Yerba “rendidora” que no se “lava” fácilmente y mantiene su sabor porque tiene un porcentaje de palo que no supera el 20%.



Proceso artesanal libre de humo:
“Sapecado”: consiste en hacer pasar la Yerba por aire caliente o fuego durante unos pocos segundos a una temperatura aproximada de 900ª. A continuación se transporta a un tambor horizontal giratorio donde continúa secándose, a menor temperatura, alrededor de veinte minutos. Mediante este proceso la Yerba pierde entre el 30% de su humedad.
“Barbacuá”: horno donde se termina de secar muy lentamente. Este proceso tarde entre quince y veinte horas.
“Canchado”: se llama así a la “molienda gruesa” de la Yerba.
“Zaranda”: la Yerba Canchada se tamiza con una Zaranda para eliminar los palos gruesos que hayan quedado y se guarda en bolsas de arpillera de 50 Kg.
Estacionamiento: las bolsas de Yerba se guardan por dos años en un galpón a oscuras llamado Noque. Esta etapa es muy importante porque permite que la Yerba pierda la clorofila o se amarille, obteniendo su tonalidad clara. La yerba que no esta bien estacionada es más oscura y puede provocar trastornos digestivos.
“Molienda final”: se separa la hoja del palo y se muelen en dos molinos diferentes para evitar el exceso de polvo y regular la calidad de la molienda. Una vez molidos se mezclan nuevamente.
“Envasado”: la yerba se deja caer en una balanza vibratoria que la acomoda en el paquete sin presionarla.

SUSTAINING THE SUBTROPICAL RAINFOREST:
The ANNA PARK Biological Reserve has 13 has. of natural unexploited subtropical rainforest. ANNA PARK is a Private Reserve, part of the Green Corridors for the Protection of Bio-diversity, and protected area under the Ecology Ministry administration of Misiones Province. The ANNA PARK Biological Reserve protects many native vegetal and animal species. As an alternative, the Yerba Mate cultivation generates sustainable income for the reserve.

The Birth and Growth of a Yerba Mate ANNA PARK Plantation:


Yerba Mate, Ilex Paraguariensis, is an evergreen member of the holly family native to the subtropical rainforest of South America. The Yerba Mate seeds are small and hard to break. The sprouting process takes six months. Once they sprout, the small Yerba Mate plants grow in a nursery for two years and then are transplanted at level curves in the fields. The distance between plants is 3 x 1.5 meters. Planting the green cover is the next step.

The Green Cover: domestic plants such as Curatu, Avena Negra Criolla and others, including foreign species like Vicia Villosa y Pasto Elefante (elephant’s grass) are interplanted with the Yerba Mate plants. The green cover enriches and nourishes the soil, Keeps it moisture, Protects plants from the summer hot weather. Provides large amounts of organic material, Fertilizes the soil and Helps to keep clean the Yerbal by controlling the overgrowing of other weeds. Thanks to the Green Cover we do not use herbicides, pesticides or fertilizers that pollute the soil, water and plants. Caring for the Yerbal (Yerba Mate plantation) and the Environment is the same thing for us.

Harvest time (la Tarefa): Once they sprout, the Yerba Mate plants reach harvest size in six years. It’s time for the first harvest. The yerba mate is a tree carefully trimmed to facilitate the harvest. The Yerba is hand-picked by the Tareferos (harvesters) who select the leaves and thin stems with the help of scissors or erruchos.

ANNA PARK Yerba Mate blend has just 20% of stem (palo) This is the perfect balance between the leaves and stems (palos) very important to obtain a premium quality Yerba Mate with a noticeable longer-lasting flavor. The harvest usually takes one day, the yerba is collected in a hundred-kilo (220 lb) sacs called Raidos and take it to the Secadero (factory) ANNA PARK Yerba Mate is made in the traditional artisan style.





The elaboration takes many steps:

"Oreado": the yerba is air dried overnight

"Sapecado": the yerba is flash-heated at 900 degrees for few seconds and slow dried at a lower temperature for twenty minutes. The yerba lose around 30% or 40% of its humidity and the leaves show little stains from the high temperature.

"Barbacua": is a very big smoke-free oven where the Yerba will stay for other 15 or 20 hours to assure is perfectly dry (especially the stems) "Canchado": is the Yerba’s first grind. Now we have Yerba canchada.

"Zaranda": the big stems are taken away and the yerba is packed in 50 kilograms (110 lb.) sacs.

"Aging": the sacs of Yerba are aged for two years in the Noque (especial dark barn or chamber) this is a very important stage. The Yerba will slowly lose the extra chlorophyll and get the yellowish tone, sign of quality and healthiness. If the Yerba Mate is not properly aged can cause digestive problems.

"Final grinding": leaves and stems are separated and grinned in different mills to avoid excessive dust caused for extra grinding the leaves and to control the perfect balance, afterwards stems and leaves are mixed again.

"Packing": the Yerba mate is weighted in a vibratory weighter and the pack is filled without pressuring the content. Once packed, the Yerba Mate must be used within 12 months, after this it will slowly lose its flavor and quality.


There are many different ways to drink Yerba Mate:

Traditional gourd: with a gourd and bombilla and hot water. Add aromatic and medicinal herbs or sweetener to taste.

Milk Mate (Mate de leche): with a gourd and bombilla, using hot milk instead of water. Add mint, cinnamom or sweetener to taste.

Terere: with a glass and bombilla, use cold water. Add ice, aromatic herbs, fruits juice or sweetener to taste.

Hot Tea (Mate Cocido): use one teaspoon per cup in a tea filter. Steep for 2-5 minutes.

Mate Express: Brew in a french press, coffee/espresso maker.

Sun Tea: let steep in the sun until it is rich amber color (about 20 minutes). Add mint or lemon to taste.

Iced Tea: Brew tea and add ice (or brew cold). Add lemon, mint or sweetener to taste.

Iced Lemon-Mate: Half Iced Mate Tea, Half lemon juice. This is a popular drink in Brazilian’s beaches.

Mate Soy Latte: Just add honey and vanilla soy milk. Great hot or iced!

Mate Soy Chai: (same as above) just add: ginger, cinnamon, cardamom, nutmeg and black pepper.


In hot preparations, first moisten Yerba Mate with cold water to protect nutrients and flavor. NEVER BOIL YERBA MATE.
